With only fruit juice, agar agar (vegan gelatin) and some sugar (optional), you can make your own delicious homemade jello!

Agar Agar Raspberry Snack are healthy and delicious snacks are made mainly from seasonal fruits, and agar agar which has the advantage of being calorie-free. There is no artificial food coloring , just lightly sweetened with a 1/2 cup of sugar i have used. We can also use honey or maple syrup in place of sugar.

What you will need for homemade vegan jello…
Fruit Juice – Most fruit juices will work. I will suggest to use home made.
Agar Agar powder – This is a white powder made from seaweed. It comes in powder or flakes, but the powder works better. If you can only find the flakes, you will need to triple the amount of flakes. (The best deals on agar agar are usually on Amazon or at your local Asian market.)
Sugar – to sweeten the jello. Sugar is optional, but if you want it to taste like traditional jello that you remember, it will require an added sweetener. You can use any type of sugar or sweetener that you would like.

Can a raspberry jello salad/dessert be elevated to more sophistication? I’m giving it a try, as well as making it non-dairy.

Agar agar powder has a more powerful gelling agent compared to gelatin. So if you plan to use gelatin to make fruit snacks, you will need more amount of gelatin. And unlike gelatin, agar agar powder needs to be heated for 2 minutes with fruit mixture to get dissolved.

Ingredients

  • 2 Cups Raspberries
  • 1/2 Cup Sugar
  • 2 tsp Agar Agar powder
  • 1/4 Cup Water

Instructions 

  • Pour the 1/4 cup water and 2 cups raspberries into a small saucepan. Heat over medium heat, stirring occasionally until raspberries have softened.
  • Use a stick blender to puree the mixture.
  • Strain the raspberry seeds out if desired.
  • Pour the 1/4 cup water in saucepan and add 2 tsp agar agar powder. Mix well. cook on medium heat.
  • Stir in agar agar powder until completely dissolved. Add raspberry juice and mix well.
  • Add sugar ,heat the mixture to a rolling boil and continue to cook the mixture for 2 minutes.
  • Pour into a baking dish or into silicone molds.
  • Place it in the fridge for about 30 minutes until firm.
  • Remove and cut into desired shapes.
  • Serve.

Notes

In this recipe i have used sugar, we can also use honey or maple syrup in place of sugar.
