Akki Roti | Rice Flour Moong Roti | Kottu Pindi Appalu

Akki roti – Akki means rice and roti means flatbread. Akki Roti or Akki ki Roti or Akki Rotti is a popular South Indian recipe, especially in Karnataka and Andhra. It is made with rice flour, water, grated or chopped vegetables, and seasoned with green chilli & salt. These rice flour flatbreads are eaten for breakfast, as a snack, or as a meal.

Akki Roti is also called by various other names like Chawal Ki Roti, Rice Bhakri, Pathri, Rice Flour Rotli, Kottu Pindi Appalu (in Andhra – Kottu Pindi or Kottina Pindi is the flour from rice that’s washed, dried, and ground). These are usually served with favorite chutneys, like Coconut Chutney or peanut chutney, or with a spicy curry or spicy pickles like Tomato Chutney or Avakai ?

What’s the magic aka ingredients?

Akki Roti is very healthy food and would keep you filled up for a good time. This recipe is very easy to make in about 15 minutes. Also, the recipe uses very basic & simple ingredients. To make it different diet-friendly, I’ve not used any onions or garlic in this recipe. However, you can season it with chopped onions, garlic, cumin seeds, vegetables like grated carrot, zucchini, cucumber, even leafy vegetables like Spinach, Methi, and dill leaves.

I’ve added soaked split Moong dal that give a nice crunchy bite feel, but many add soaked Chana dal as well. This is a great recipe for someone looking for Gluten-free diet and vegan options. Making Akki rotti requires some practice. The water to the flour proportion is the key to this recipe. I’ve tried many combinations and finally landed on this recipe. This is a tried and tested recipe that gives you the best Akki Rotti every time.

Unlike the regular wheat flour roti dough, the rice flour mix forms a smooth/soft dough. So, Akki Rotis are not rolled, but the dough is patted with hands. A greased plastic sheet such as a Ziploc bag, parchment paper, or the traditional plantain/banana leaf makes it easy to do this. If you are not comfortable with patting, you can use a rolling pin, put the dough ball between two greased plastic sheets, and roll gently.

Tips to make Perfect Akki Roti:

  • Add salt to the boiling water before adding rice flour.
  • Use brown rice flour that’s healthier compared to white rice flour
  • Add the rice flour slowly into the hot water. Don’t worry about the clumps, just break them, and mix.
  • Roll them to round shape and thin on like Flat bread/Chapati on Parchment Paper, Ziploc
  • Akki Rottis are usually soft to bite, cook them on medium heat just until when you see small brown spots on each side.
  • Do not cook them for too long on the griddle, which makes them crispy, but hard to bite.
  • Wrap them in aluminum foil while still warm and they stay fresh up to two days
  • You can try the same recipe with other whole grain millet flours such as Sorghum/Jowar, husked millets (like Kodo Millet, Pearl Millet), or Quinoa and they taste great too.

Ingredients

  • 1 cup Rice flour Brown Rice flour
  • 1 tsp Green Chili paste
  • 4 tbsp Moong dal
  • 1 tsp Ghee or oil optional
  • salt to taste
  • Oil enough for cooking

Instructions 

  • Soak moong dal in a cup of water for around 30 mins.
  • In a pan, bring 1 cup of water to boil
  • Add salt, ghee, and green chili paste.
  • Add soaked moong dal and mix well. Cook for 5 mins.
  • Add 1 cup rice flour and mix together.
  • Cook on low heat for 5 mins with lid closed.
  • After 5 mins remove from heat and transfer into plate.
  • Wet your hand and mix the dough and make it into a smooth dough using the water. Add a little more water or rice flour if necessary.
  • Divide the dough into small ball portions.
  • Heat a griddle or Cast Iron Tawa on medium heat.
  • Take a big lemon sized dough and flatten by patting on a greased surface like Ziploc or Parchment paper.
  • Place the roti on hot griddle and add a tsp of oil
  • Cook for a minute or two until light golden brown spots starts to appear
  • Flip over and cook covered for a minute or two.
  • Remove the cover, flip it over and cook for a few more seconds to crisp up.
  • Serve rice flour moong dal roti with simple garlic pickle or with any chutney or pickle of your choice.

Notes

  • Make sure to cook the roti well on both sides.
  • For a vegan recipe, replace ghee with oil of your choice.

How to make rice flour moong roti with step by step :

  2. Serve akki roti or rice flour moong dal roti with simple garlic pickle or with any chutney or pickle of your choice.
