Aloo Paratha | Dhaba style aloo paratha recipe with detailed photo and video recipe – It is an easy North Indian breakfast dish. This breakfast recipe is perfect for mornings and is a complete meal in itself. Because this easy stuffed flatbread is so good, you’ll want to make it over and over again! 

Indian Aloo Paratha – whole wheat flatbread stuffed with a spicy potato filling. This paratha is best enjoyed with yogurt, pickle and butter.

Here’s something different you can make with leftover potato that is really easy to make! Aloo Paratha is a potato stuffed flatbread that is a popular dish in India. 

Parathas (Indian flatbreads) are very popular in India and are typically served for breakfast. However, in the Western world this is served as a side with curries, or as an appetizer. Along with naan, parathas are always a “must have” when I go out for Indian. You can get plain Parathas, but my favorite is Aloo Paratha (“Aloo” means “Potato”). 

Crispy, flaky Aloo Paratha are an emblem of soulful Indian home cooking. Almost every home has their own unique recipe and technique for making this delicious North Indian stuffed flatbread at home. Of all the stuffed breads India is famous for, Aloo Paratha is the one loved in every family kitchen.

Indian aloo paratha (Potato stuffed flat bread)

My aloo paratha is nothing fancy, it’s a basic simple recipe which is made in every household in India.

Making stuffing : Just some boiled mashed potatoes, mixed with spices and then stuffed in the dough, which is then rolled and pan-fried. Some people like to grate the potatoes for more texture, I just go the traditional way and mash the potatoes. For more spicy we can add green chilies, coriander leaves, ginger, onion, salt, red chili powder, dry mango powder,  roasted cumin powder, and garam masala powder.

Making Dough : Simply mix everything (Whole Wheat flour and salt) together and knead with your hands until a smooth, silky and elastic forms.  ( If your dough is still very dry after, add 1-2 tbsp more water* ).

Tips to Make a Good Aloo Paratha

  • The key to making a good paratha always lies in kneading a soft dough and then rolling the paratha evenly. Once you get that done, stuff it with your favorite ingredients (spiced potato in this case) and then fry it on a medium-high heat.
  • Always make sure that your tawa/griddle on which you will be making the aloo paratha is hot before you put the paratha on it. If it’s just medium hot, the paratha will take time to cook and that will result in a “not so soft” paratha.

For Vegan : In place of butter, use oil to cook paratha.

Ingredients

For Stuffing

  • 2 medium potatoes 1 cup mashed potatoes (aloo)
  • 1 tsp red chili powder
  • 1/4 tsp cumin powder
  • 1/4 tsp garam masala
  • 3/4 tsp salt or adjust to taste
  • 3-4 tsp Butter to cook the paratha For vegan use oil

For Dough

  • 1.5 Cups Wheat Flour/ atta
  • 1 tsp oil
  • 1/4 tsp Salt
  • Water to knead the dough

Instructions 

Make the dough

  • In a bowl mix together whole wheat flour (atta), oil and salt.
  • Add water little by little and mix. Knead to form a smooth and soft dough.
  • Cover for 15-20 minutes. Divide the dough into 12 equal parts.

Make the Filling

  • To make the filling, mash the boiled potatoes and transfer to a bowl.
  • Add cumin powder, garam masala powder and red chili powder. Mix till everything is well combined. The stuffing is now ready.
  • Divide the potato mixture into 12 equal balls.

How to Make the paratha : Method 1

  • Take one dough ball and roll it into a circle. Keep aside
  • Take another dough ball and roll it into a circle.
  • Both should be same size.
  • place potato ball and press gently .
  • Place other chapati on top.
  • Flatten with your hands.
  • Now using your rolling pin, roll the dough to a circle of 7-8 inch diameter.

How to Make the paratha : Method 2

  • Take one of the dough balls and using your rolling pin roll it into a circle.
  • Place 2-3 tablespoons of stuffing in the center. Don't overfill else it will be difficult to roll. Bring all the edges together and pinch to seal the edges.
  • Flatten with your hands. Now using your rolling pin, roll the dough to a circle of 7-8 inch diameter.
  • Repeat the remaining .

Cooking paratha:

  • Heat fry pan over medium heat.
  • Transfer the rolled paratha onto the hot tawa.
  • cook the first side for 1 minute and then flip over.
  • Apply butter [around 1/4 teaspoon] on the half-cooked side and flip again. Now apply butter on the other side as well. Press with a spatula and cook the paratha till both sides have golden brown spots on them.
  • Proceed to cook the remaining Parathas.
  • Serve aloo paratha hot with butter, pickle and a cup of chai!

Notes

  • You may use ghee to cook the parathas in place of oil. But if you do that, the paratha won’t be vegan because ghee isn’t vegan.
  • Adjust spice levels to taste.
