The biscuit has a delicious chocolate flavour that balances well against the sweet and creamy chocolate filling. The rich chocolate flavour is balanced against the sweet and creamy icing layer.

Bourbon Biscuit Cream Filling
Mix all the ingredients (Hot Cream and chocolate) together to form a stiff buttercream. Adjust with a few drops of liquid; just don’t make the filling too soft.Match up two biscuits at a time (they won’t all be exactly the same size, believe it or not) and sandwich together with the filling.Continue until all the biscuits and filling are used. Why Are These Chocolate Biscuits Called Bourbon Biscuits?
Bourbon biscuits simply mean 2 rectangular chocolate filled sandwiched with chocolate buttercream filling. That is chocolate all over, inside as well as outside.
As per WIKI, these Biscuits were introduced in 1910 by the biscuit company Peek Freans of Bermondsey in London. These were then known as Creola. Later in 1930, the former French Royal House of Bourbon renamed these as Bourbon Biscuits. These biscuits are the fifth most popular biscuits in the United Kingdom.
Any idea why there are holes in the Bourbon Biscuits? Well, the holes are there so that the steam escapes easily while baking without causing any cracks or breaks in the biscuits.
Does Bourbon Biscuits Contain Alcohol? No! Though there is an alcohol called Bourbon but it has no relation with these biscuits. There is no alcohol in these biscuits and are thus safe for children to consume.

How To Make these biscuits in your Kitchen?
Mix all the ingredients (all purpose flour, sugar, unsalted butter, cocoa powder, baking powder, baking soda ). Seive the dry ingredients are most important thing. Mix well with wet ingredients. If you feel dough is tight, add little milk to form into dough. or if you dough is so soft to handle, keep the dough in refrigerator for 30 mins. Biscuit dough prepartion is done.
Then, the dough is rolled out and then cut rectangular pieces. These rectangles are pricked with holes, white sugar is sprinkled to give the authentic look and then baked.
After baking, the biscuits are allowed to cool completely. In the meantime, a simple filling is prepared is mixing hot cream and chocolate. It will be soft at that time. Keep for aside for 15mins. It will becomes thick. We can also make another filling by mixing butter, sugar, vanilla essence and cocoa powder. Once they are completely cool, these are sandwiched with this chocolate filling and your homemade bourbon biscuits are ready.

How to make Bourbon Biscuits with step by step :
1.Preheat oven to 180 degree c or 350 degree F
2. Take butter and sugar in a bowl and whisk till creamy.
3. Sieve in flour, cocoa, baking soda, baking powder and mix well.
4. Roll it between parchment paper till it is 2 cm thick.
5. Cut into strips like bourbon biscuits.
6. Arrange in a tray lined with parchment paper. prick with stick, sprinkle sugar all over the cookies on half of the cookies.
7. Bake @ 375 F or 185 C in the oven for 9 to 12 mins. Remove it and cool it down.
8. Now make the filling, take all ingredients in a bowl and mix till creamy. Keep aside for 15mins to get thick.
9. Take cookies, spread filling on one side, top with other cookie.
10. Serve with hot tea
