Buttermilk chakralu | Perugu jantikalu with detailed photo and video recipe – Jantikalu also known as murukku/ thayir murukku is my family’s traditional murukku recipe and always holds priority place in snacks during festivals , so i prepared this as my first murukku for this festivals. This murukku is my grandma’s recipe and I have relished it since childhood and now my hubby is great fan of this murukku.

Buttermil Chakkalu is a deep-fried snack made from rice flour or a mixture of lentil flours.

This delicious snack is perfect for serving to the guests during festivals when they are tired of having endless sweets. South Indians prepare various type of foods to relish during the festivals, chakralu is one of them. This snack stays good for many weeks if stored properly in an airtight continer.

These also make a great snack to munch of casual get togethers with friends and family and not to forget they’re a perfect as travel time snacking .

Prepare the dough and Place it in chekkalu press mould in hot oil and deep fry until it is crispy.

The deep frying needs to be done on medium flame to ensure evenness in cooking, crispness and to achieve that golden.

Ingredients

  • 1 cup Rice Flour
  • 1/4 tsp Ajwain
  • salt to taste
  • 1/2 tsp Chili powder
  • 3/4 cup Yogurt
  • 1/2 tsp Hot oil
  • Water as needed
  • Oil for deep fry

Instructions 

  • Take a bowl, add rice flour, ajwain, salt, yogurt, red chili powder and mix nicely.
  • Add little water and hot oil to the same pan and mix nicely to make soft dough.
  • Apply oil to Janthikalu press and add prepared rice flour dough.
  • press mould in hot oil and deep fry until it is crispy.
  • At last, transfer into paper towel and serve it.

Notes

Deep fry in medium heat, it will be more crispy
We can also add sesame seeds in dough.

How to make Buttermilk Janthikalu with detailed step by step :

1.Take a bowl, add rice flour, ajwain, salt, yogurt, red chili powder and mix nicely.

2. Add little water and hot oil to the same pan and mix nicely to make soft dough.

3. Apply oil to janthikalu press and add prepared rice flour dough.

4. press mould in hot oil and deep fry until it is crispy.

5. At last, transfer into paper towel and serve it.
