Chutneys can be made with a variety of vegetables. Mix n match a variety of vegetables, nuts, seeds to make rich, enticing, exquisite chutney. This is a Vegan, vegetarian, gluten-free. Whichever vegetable you make chutney out of, Chutney is loaded with iron, vitamins, and antioxidants.

Traditionally, vegetables are cooked in spices and crushed with the hand in a mortar pestle to make chutney. In the modern generation, grinders are used. Chutney is usually consumed with rice and ghee poured on top. Lately, with low carb consciousness, people prefer eating chutneys as homemade dips for tortilla chips, pita chips, south Indian snacks as sakinalu, janthikalu, and karappusa.

They make excellent all-natural condiments too. Chutneys are one of the easiest recipes to make. Chutney can be made with little effort and a handful of fresh ingredients. The secret for perfect chutney is a balanced amount of vegetables, chilies, salt, and a sour agent usually tamarind. Optionally jaggery can be added. Salt, chilies, sourness, and sweet blends into a unique tasty dish.

Celery Tomato Chutney | Celery Pachadi

Celery Chutney, is a condiment to be served with any appetizer, Idli, Dosa, Roties. A successful attempt in making use of locally available vegetables. This chutney provides a wholesome taste, perfect to be paired up with any food of your choice.

Ingredients

  • 6 Celery Sticks
  • 2 Tomatoes Diced
  • 5 Green chilies
  • 4 Red chilies
  • Pinch Turmeric
  • Hing
  • 3 Garlic Cloves
  • 1 tbsp chana dal
  • 1 tbsp Cumin seeds
  • 1 tbsp Peanuts
  • 1 tbsp Sesame seeds optional
  • 1 tbsp Urad dal
  • Oil
  • Salt as needed

Seasoning

  • Oil
  • 1/2 tsp Chana dal
  • 1/2 tsp cumin seeds
  • 1/2 tsp Urad dal
  • 1/2 tsp Mustard seeds
  • Curry leaves
  • 1 Red chili

Instructions 

Preparation

  • Clean celery thoroughly, dice celery into ½ inch pieces.
  • Chop tomatoes into small pieces

Method

  • Heat oil in a pot. Heat to medium.
  • Add chana dal, urad dal, peanuts, sesame seeds, cumin seeds , green chili, red
    chili and garlic.
  • Fry till golden brown and keep them aside.
  • In the same pan add celery and tomatoes.
  • Add salt and turmeric.
  • Cook on medium heat with lid covered.
  • Transfer the dal and celery mixture into blender.
  • Pulse slowly until soft. Make sure all pieces are ground.
  • Transfer to a bowl.
  • Now, prepare to seasoning. Pour 1½ to 2 tbsp oil in a pot. Heat to medium-high.
  • Add ingredients under seasoning , fry until golden brown.
  • Add seasoning to chutney .
  • This chutney will stay fresh in the refrigerator for 1 week. Use it for as many
    meals within a week.
  • Serve with rice, dosa, idly or roti.

How to make Celery Tomato Pachadi with Step by Step
