I have used vinegar which also kills the smell of eggs. If you wish to use tomato or chili sauce, you can add it along with vinegar

Ingredients

  • 4 Eggs
  • 2 tbsp Chopped Carrots
  • 2 tbsp Chopped Capsicum
  • 1/4 Cup Chopped Onion
  • 1 tbsp Chopped garlic
  • 1 tsp Soy sauce
  • 1 tsp Vinegar
  • 1 tsp Pepper powder
  • 1/2 tbsp Green onion
  • 2 Cups Cooked rice
  • Oil
  • Salt

Instructions 

  • Prepare the rice and set aside to cool down completely.
  • Heat oil in a wide pan or kadai. Once the pan has heated up, add finely chopped garlic. Fry the garlic for 1 min
  • Add chopped onion, carrots and capasicum . Saute the veggies (Don't over cook the veggies).
  • Once that is done, break the eggs and add them to the pan.
  • Let it cook for 4-5 seconds. Then quickly stir till the eggs get scrambled and blend with the veggies.
  • Now add the soya sauce, vinegar , pepper powder and salt.
  • Finally add cooked rice.
  • Mix well to coat the rice with spices and switch off the flame.
  • Garnish with green onion.
  • Serve egg fried rice.

Notes

Make sure the rice is cooled completely before adding it to the pan.
Finely chop the vegetables to almost a uniform size so they get cooked evenly.
Use pre-cooked or left-over rice for this recipe.
