I’ve been in the U.S. for 8 years; however, I had never tasted Green Tea Ice Cream (Matcha Ice Cream) that is authentic until I found this recipe. I’m really excited to share this recipe with you today!

Homemade Matcha Ice Cream Recipe is not as creamy. It is sweet, but it has a very strong matcha taste that is slightly bitter. It’s a perfect balance!

What’s Matcha?

Matcha (抹茶) – literally ‘powdered green tea’ – is a unique green tea made of top quality tea leaves that are covered before picking, then stone-ground into a delicate fine powder. matcha has been used in traditional Japanese sweets (wagashi), baked goods, ice cream, and drinks.
Unlike regular green tea that we drink, matcha is made from shade-grown tea leaves to prevent direct sunlight, which slows down growth and stimulates an increase in chlorophyll level, which turns the leaves into a darker shade of green. Only the finest tea buds are hand-picked, leaves de-veined and de-stemmed, and then stone-ground to the fine bright green powder. It could take one hour to grind 30 grams of matcha.

DOES GREEN TEA ICE CREAM HAVE CAFFEINE?
Yes. Matcha has antioxidants, chlorophyll, and amino acids unlike other forms of caffeine, but are about half the amount of a cup of black coffee. One quart of this matcha ice cream has 6 servings of matcha.

After some seriously delicious recipe testing, I am excited to offer you my fantastically wonderful matcha ice cream. This is the good stuff…full of matcha flavor, without all the extra sugar to distract you.

Ingredients

  • 2 tbsp matcha powder
  • 1/2 Cup Milk
  • 1 3/4 Cup Cream
  • 3/4 Cup Condensed milk

Instructions 

  • Take 2 tbsp of matcha powder into small bowl.
  • In sauce pan add milk and warm for 2 mins.
  • Add this warm milk to matcha powder and mix well.
  • Add condensed milk and mix well.
  • Pour cream into big mixing bowl.
  • Whip on medium speed until stiff peak.
  • Add prepared matcha mixture to cream. Mix well .
  • place in freezer for 3 hours.
  • After 3 hours again whip the cream into smooth batter.
  • place in freezer for 2 hours.
  • After 2 hours again whip the cream into smooth batter.
  • place in freezer for 2 hours.
  • Ready to serve .
  • Enjoy matcha ice cream

Notes

we can increase or decrease matcha powder as per our taste.
In place of condensed milk we can also use sugar or sugar powder
