Here’s a snappy, fresh side dish or a light supper: a green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, apple cider vinegar and salt. Its simplicity makes it perfect.

Here we’re making a quick and easy kale salad recipe, perfect for the weather we’ve been having lately! It works especially well because I’ve been trying to incorporate as many iron-rich foods as possible in my diet.

I have used cubed paneer, corn, cucumber, onions and cherry tomatoes. I have fried paneer, kale and corn to give nice tasty. In place of paneer we can also use chick peas for crunchy and also we can use walnuts too.

Ingredients

  • 1 Cup Chopped Kale
  • 1 tsp Olive oil For Cooking
  • 1 tsp Olive Oil For dressing
  • 1 tbsp Lime juice
  • 1/4 Cup Cubed Paneer
  • 2 tbsp Sweet corn
  • 2 tbsp Chopped Onion
  • 2 tbsp Cubed Cucumber
  • 1 tsp Crushed red pepper flakes
  • 5 Cherry tomatoes Halves
  • 2 tbsp Finely chopped yellow peppers
  • 1/4 Cup Cooked black beans
  • 1/2 Avacodo
  • 1 tsp Apple cider vinegar
  • Salt to taste
  • Pepper tp taste
  • Spring onion Garnish

Instructions 

  • Heat a pan add oil
  • Add cubed paneer and fry for 3 mins. Keep them aside
  • In the same pan add chopped kale and salt
  • Saute for 3 mins and keep them aside
  • In the same pan add sweet corn
  • Fry until golden and keep them aside
  • Take large mixing bowl, add chopped onion
  • Add halves cherry tomatoes
  • Add finely chopped yellow peppers
  • Add black beans
  • Add fried paneer
  • Add fried sweet corn
  • Add chopped cucumber
  • Add chopped avacodo (Half)
  • Add sauted kale
  • Add apple cider vinegar
  • Add salt
  • Add lemon juice
  • Add olive oil
  • Add black pepper
  • Mix well
  • Garnish with some spring onion
  • Kale salad is ready to serve

How to make Kale Salad with Step by Step :

1.Heat a pan add oil

2.Add cubed paneer and fry for 3 mins. Keep them aside
