Making lemon rice is one of the simplest and is great to begin . The entire dish just gets done under 10 minutes if you have some precooked rice ready.

It tastes good on its own. However many love it with plain yogurt or curd, pickle. During festivals or occasiona we serve it as prasadam.

It is one of the most common travel foods. Many people pack if for road or train journeys as the dish keeps good for long hours due to the addition of turmeric.

Lemon rice

For this South Indian lemon rice recipe, I first cooked the rice and then seasoned it with all the ingredients.

In fact when you use pre-cooked rice, the cook time is reduced even further and you can make this dish in 15 minutes!

You can even add cashews if you want. Even ginger would be good here, though I did not add it.

South Indian spices and fresh Lemon juice give a spicy and slightly tangy taste enhances the taste of plain rice and give this dish a distinctive flavor.

You can make this recipe with fresh or leftover rice. It uses minimal spices in flavoring and is a no onion no garlic recipe.

Lemon Rice can be eaten as main course or as a side dish. Kids love this tasty and aromatic rice and the dish is a good choice for tiffin box.

Ingredients

  • 1 1/2 Cup Cooked Rice
  • 2 table spoon Peanuts
  • 10 Curry leaves
  • 4 Green Chilies
  • 1 tea spoon Mustard seeds
  • 1 tea spoon Cumin seeds
  • 1 table spoon Urad dal
  • 1 table spoon Chana dal
  • 2 Red chilies
  • 1/2 tea spoon Turmeric
  • Hing
  • Salt
  • 1 – 2 table spoon Lemon juice
  • 2 table spoon Oil

Instructions 

  • Heat a pan with oil on a medium to low flame.
  • When it turns hot, add urad dal, chana dal, peanuts, green chili, red chili, cumin seeds , mustard seeds and curry leaves.
  • Fry on a medium flame until the dals turn golden and aromatic.
  • Then add hing and turmeric, keep aside.
  • Take 1 1/2 cup cooked rice in a mixing bowl.
  • Add lemon juice and salt . Mix well.
  • Pour this to the lemon rice . Mix everything well.
  • Serve lemon juice with plain yogurt or pickle.

Notes

Make sure to use leftover rice for better taste and non-sticky LEMON RICE.
Adjust the amount of chilli based on your spice level.
We can also use cashewnuts in seasoning.
