Ingredients
1CupLong grain rice
1/2CupOnionChopped
2tbspRed Peppers
1 1/2CupPineappleChunks
8 - 10Cashew Nuts
1tbspMinced garlic
1/2tbspSoy sauce
1tbspRed chili Sauce
3 or 4Green Chilli Slit
1/2tspPepper powder
Salt
Coriander leaves
1tbspOil
Instructions
Rice Preparation
Wash and soak rice for 30 mins
In large pan add 3 cups of water.
Add salt and oil to water.
Boil the water and add soaked rice
Gently mix the rice and cook for 5-8 mins or until done. Rice should not be sticky.
Drain the rice and cool completely.
Method
Heat a pan add oil
Add garlic, cashew nuts. Saute until it smells good.
Add chilli, onions and red peppers.
Fry until the peppers are lightly cooked and cruchy.
Add soya sauce, red chili sauce. Mix well
Add pineapple chunks. Saute pineapples for about 2 mins.
Add the rice , pepper powder and salt.
Toss everything well and fry for 2 – 3 mins
Garnish with coriander leaves
Server pineapple fried rice hot or warm.
Notes
We can also add raisins, cumin powder, coriander powder and garam masala also. Today i have not added these. With out these also it will tasty yummy.Rice should be grainy and cooled completely.
