Ingredients
8ozCream cheeseAt room temperature
1/2CupHeavy cream
10Graham crackers
3tbspMelted butter
1/4CupGranulated sugar
2tbspGelatin powder
4tbspWarm water
Raspberry Topping
1/2CupRaspberries
2tbspGelatin
4tbspWarm water
Instructions
Place the biscuits into a food processor and process until fine crumbs form.
Add melting butter mix until well combined.
Pour the crumbs into a cake tin and use the back of a spoon or glass to compact down.
Place the cake tin into the fridge to set for 15 mins
Dissolve the powdered gelatin in the boiling water and keep them aside.
In a medium sized bowl add the room temperature cream cheese, sugar and heavy cream. Beat together with a whisk until smooth and lump free.
Add dissolve gelatin into mixture and mix well.
Pour the cheesecake filling on top of the cheesecake base and smooth.
Place into the fridge for a few hours to set.
Dissolve the powdered gelatin in the boiling water and keep them aside for raspberry topping
Blend the raspberries, honey and dissolve gelatin
Strain through a sieve into a medium sized bowl.
Pour the berry mixture on top of the cheesecake and place into the fridge to set for at least 4 hours or overnight.
Serve topped with berries and fresh whipped cream.
Notes
Instead of gelatin you can also use agar agar or just freeze the cheesecake to set.
