This chutney is more like a powder than chutney though and a sprinkling on the pav makes the best Vada Pav Ever.

Ingredients
2tspOil
1/4CupGarlic
1tbspPeanuts
1/2CupGrated dry coconut
1tbspCoriander seeds
1tbspSesame seeds
1/2tspCumin seeds
3tbspRed chili powder
Salt to taste
Instructions
Add oil to the fry pan
Add garlic to the hot pan, roast the garlic until slightly browned.
Add cumin seeds, coriander seeds, peanuts, sesame seeds and roast on low flame.
Add dry coconut , roast until browned and keep aside.
Let all the roasted ingredients cool.
Add all the ingredients in a blender along with red chilli powder and salt and blend to make a coarse powder.
Store in an airtight container in refrigerator for up to 10 days.
Notes
we can dry roast the ingredients individually and keep them aside. Here i have roasted all at one time, but i have done on low flame. I have used coriander seeds, in place of coriander we can also use sesame seeds.
