Instructions
Take 3 tbsp of oil to fry pan.
Add the tempering ingredients like mustard seeds, cumin seeds, chana dal, and curry leaves.
Allow them to splutter. and then add green chilli and groundnuts.
Add chopped onion and salt . Saute for 2 mins.
Add chopped brinjal, to avoid de-colouration and to remove the bitterness, soak brinjals in water.
Add 1 tbsp water , saute and fry them till they shrink in size.
Add 2 tsp of vangi bhath masala, salt and turmeric powder.
Mix well
Add cooked rice,salt and lemon juice and gently mix the rice with the masala.
Add few coriander leaves.
Serve vangi bhath with raita and garnish with fried cashew nuts
