This is tranditional karanaka recipe .The flavors of the fresh spices and ground lentils used in various dishes is simply divine. Bisi bele bhath to me is the ultimate comfort food when it comes to simple home cooked south indian food. It is a wholesome and nutrition packed one pot meal made with rice, lentils and mixed vegetables.

Ingredients
1CupRice
3/4CupToor dal / yellow pigeon peas
1/2Cupgreen beans cut into 1 inch pieces
2Carrots (peeled and sliced (1/2 CUP)
1/2Cupbrinjal/eggplant 1 inch pieces
1/2cuppeas
8 -10 curry leaves
1/4cupcilantro chopped for garnish
3tbsptamarind watermore or less depending on how tangy it is
1tbspjaggery
1tbspghee
1tbspoil
1/2tspchana dal
1/2tsp mustard seeds
1/2tsp cumin seeds
1red chili
curry leaves
salt
2tbspcashew nuts
3tbspbisi bele bath masala powder
1/2tspturmeric
1/8tsphing
Instructions
Rinse rice and lentils and keep aside. Wash and chop all the vegetables.
Turn the Instant Pot to sauté (more) mode
Add oil and ghee . once the oil is heat add cashew nuts.
Fry for 2 mins and keep them aside.
Add mustard seeds, chana dal, cumin seeds, asafetida , red chili , curry leaves and turmeric. Let the mustard seeds pot, may take 2 to 3 minutes.
Add all the vegetables (carrots, peas, brinjal, beans). Mix well.
Add salt, tamarind water, jaggery and bisibele bath masala powder. Mix well.
Add rice and lentils and 5 cups of water.
Close the Instant Pot lid with the pressure value set to sealing. Press the pressurecooker button. Pressuer cook for 7 mins. Allow the pressure to release naturally, about 15 mins. Open the Instant pot and stir the bisi bele bhath lightly.
If required add hot water add stir. ( I have added 1/2 cup hot water).
Serve hot with a drizzle of ghee and roasted papad.
Notes
For home made masala : 4-6 dried red chilies I use mild Kashmiri chilies 2 tsp coriander seeds 1/2 tsp fenugreek seeds 1 tbsp chana daal 1 tbsp shredded coconut dried or freshDry roast the ingredients and blend into powder
