paneer cutlet recipe
easy to prepare crisp and tasty cutlets made with paneer and mix vegetables. Cutlets, kababs and patties make for tasty snacks.

Ingredients
For cutlet

paneer / cottage cheese
grated

potato
boiled and mashed

carrot
grated

tsp
red chili powder
1/2

amchur powder / dry mango powder

garam masala
1/2
tsp
chat masala

tbsp
corn flour
salt as required
For slurry
1/4
cup
corn flour
1/4
tsp
pepper powder

tbsp
maida / all purpose flour / refined flour
1/2
cup
water
For outer layer
1
cup
bread crumbs
1/2
tbsp
mixed herbs
oil for frying
Instructions
In a large mixing bowl combine all the ingredients listed for cutlet.
prepare maida paste by combining ¼ cup corn flour, 2 tbsp maida, ¼ tsp pepper, ¼ tsp salt and ½ cup water.
mix well to form lump free and flowing consistency batter.
take 1 cup bread crumbs into plate add mixed herbs. mix well.
prepare a small ball sized patties greasing hand with oil. greasing oil prevents dough from sticking.
flatten the ball slightly and shape the edges into smooth texture.
dip in prepared slurry (maida paste) and cover batter all sides.
coat with bread crumbs all sides. use bread crumbs / crushed corn flakes as they give nice crispy texture.
shallow fry or pan fry in hot oil. For healthy option, bake in preheated oven at 180 degree celsius for 10 minutes.
fry on medium flame, flipping occasionally till it turns golden brown.
serve panner cutlet with any sauce you like.
