Bajra Muffins | Pearl Millet Muffins | Pearl Millet and blueberry Muffins
Pearl Millet Flour and blueberry muffins, a succulent delicacy which is famous all over the world. Bajra muffins is one dish which make it accompaniments tastier. Pearl millet/Bajra/Kambu is rich in insoluble fibre which helps in slow absorption of sugar and aids in digestion. This is the first time I baked using this bajra flour. It is guilt-free.

Ingredients
2/3CupBajra Flour
1/4CupFlax meal
2/3CupCoconut Sugar
2Eggs
1/4CupEggs
3tbspBlueberry juice
1tspVanilla essense
1/2tspBaking soda
1/2tspBaking powder
PinchSalt
Instructions
Preheat the oven to 350F.
Seive bajra flour, Flax meal, baking soda , salt and baking powder in a bowl well.
In another bowl, add sugar, oil and eggs and beat well till sugar dissolves.
Mix in the flour, vanilla essence and add blueberry paste to the above wet mixture until well incorporated.
Grease a Muffins pan and pour the batter into muffin pan.
Bake for about 30- 35 minutes. Keep checking by inserting a toothpick until it comes out clean.
Enjoy the moist guilt free and gluten free yummy Bajra Muffins.
Notes
Add in more blueberry paste a few drops at a time if you feel the batter is dry.In place of flax meal we can also use cocoa powder
