Ingredients
1tbspOil
1/2tspButterOptional
1/2tspCumin seeds
1-2Bay leaf
2Piecescardamom
2clove
1Inchcinnamon
4Green chilies
1tbspGinger garlic paste
1tspCashew nuts
1Medium onion sliced
1/2CupCarrotsChopped
1/2CupGreen peas
1CupCoconut Milk
1/2CupWater
1CupBasmati RiceWashed
SaltAs per taste
Instructions
INSTANT POT METHOD
Press SAUTE mode on Instant Pot.
Add oil and butter, once it’s hot add Bay leaf, whole spices, cumin, green chillies ,ginger-garlic paste .Saute for 30 secs until aromatic.
Then add sliced onions and cashew nuts,cook until they turn soft and light brown in color – stir regularly.
Add vegetables and cook for another 2-3 minutes.
Add Coconut milk,water,washed Basmati Rice,salt and give a stir .
Press CANCEL button on Instant Pot
Close the lid on the pot, and turn valve from VENTING to SEALING position.
Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 6 minutes.
Do a NATURAL PRESSURE RELEASE(NPR for 10-12 min) (Wait until silver button on lid drops).BE CAREFUL OF THE HOT STEAM
Remove lid away from you,mix well and fluff with a fork or spoon.
Coconut milk Pulao is ready.Serve with Curry,Raita or plain yogurt.
INDIAN PRESSURE COOKER METHOD
Heat a pressure cooker with oil on medium flame, and once it’s hot add Bay leaf, whole spices, cumin, green chillies ,ginger-garlic paste.
Saute for 30 secs until aromatic.
Then add sliced onions,cook until they turn soft and light brown in color – stir regularly.
Add vegetables and cook for another 2-3 minutes.
Add Coconut milk,water,washed Basmati Rice,salt and give a stir .
Close the lid place a whistle and cook for 2 whistles on medium flame.
After 10 mins Fluff up the rice gently.
Coconut milk Pulao is ready.Serve with Curry,Raita or plain yogurt.
Notes
1. You can also add mint/pudina leaves and coriander leaves/cilantro to enhance flavor.2.For vegan recipe please avoid butter.3.You can use store brought coconut milk.if you dont get thick coconut milk then use thin version and add 1.5 cups for this recipe and skip water.
