For Marination

Instructions
Marination
Take some Hot Water in a bowl . Take 1 Cup of Soya Chunks and Soak it in the hot water for 15 minutes till they soften Squeeze excess water completly and keep aside.
Take a mixing bowl, add yogurt,cumin powder, red chili powder, garam masala, soya chunks, onions, carrots, potatoes, chopped mint, turmeric. Mix well and keep aside for 1 hr.
INSTANT POT METHOD
Press SAUTE mode on Instant Pot. Add oil and butter and once it's hot add all the whole spices. Saute for 30 secs.
Add sliced onions, ginger-garlic paste. Saute for 2-3 minutes until they turn soft and light brown in color – stir regularly.
Add marinated mix.
Add washed Basmati Rice,water,salt, biryani masala and give a stir .
Add chopped coriander leaves and ghee on top.
Press CANCEL button on Instant Pot.Close the lid on the pot, and turn valve from VENTING to SEALING position.
Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 6 minutes After Pot beeps,wait for NATURAL PRESSURE RELEASE(NPR). (Wait until silver button on lid drops).BE CAREFUL OF THE HOT STEAM Remove lid away from you.
Soya Biryani is ready.Serve with Raita or plain yogurt.
INDIAN PRESSURE COOKER METHOD
Take some Hot Water in a bowl . Take 1 Cup of Soya Chunks and Soak it in the hot water for 15 minutes till they soften Squeeze excess water completly and keep aside.

In a Pressure cooker ,Add oil and butter and once it's hot add all the whole spices . Saute for 30 secs.
Add sliced onions, ginger-garlic paste. Saute for 2-3 minutes until they turn soft and light brown in color – stir regularly.
Add marinated mix.
Add washed Basmati Rice,water,salt, biryani masala and give a stir .
Add chopped coriander leaves and ghee on top.
Cover the cooker with lid and cook for two whistles on medium flame.
After 10 mins Fluff up the rice gently.
Soya Biryani is ready.Serve with Raita or plain yogurt.
Notes
1.Vegans can skip ghee and use any kind of vegetable oil.2.Vegans can skip yogurt and add juice of half lemon.3.You can use any vegetables of your choice like green peas,green beans along with soya chunks.4.You can increase or decrease spices accordingly.5.You can also do a Quick Release(QR) once the Pot beeps if you less time.
