ULLI GARELU OR ONION MEDU VADA OR SPICY VADA
Vada recipe – Garelu, Uddina vade, ulundhu vadai, medu vada are the south indian names to these round disc shaped fritters. These are one of the very popular south indian Foods served for Breakfast or Snacks.

Preparation
Soak the Urad dal for 4 - 5 hrs
Chopped finely onion , green chilies , coriander leaves and ginger
Method
Grind the soaked dal into smooth batter by adding adding salt, ginger and little cold water.
It should not be runny and more thick.
Add chopped onions, coriander leaves,chilies, cumin seeds and salt.
Mix well
Heat the oil in a frying pan in medium flame.
Wet your palms and take a lemon size batter.
Make hole in the center and slide it into the hot oil.
Carefully drop into hot oil.
The vada should float on top of oil.
Make sure your oil is not too hot. otherwise the vadas would not cook evenly.
Fry on both sides till it becomes golden brown in color.
Serve medu vada immediately with chutney or sambar.
Notes
medu vada batter should be thick.
once the batter is grinded, prepare the vada immediately and do not leave it to ferment.
4-5 hours of soaking is enough for urad dal. overnight soaking is not required.
