Preparation
Soak the beans for 5 -6 hrs
Method
Press the SAUTE button on your instant pot and allow to heat up for 2 minutes.
Add vegetable broth
Add soaked beans
Add pasta shells
Add chopped tomatoes
Add spinach
Add chopped celery
Add chopped zucchini
Add all dry leaves powder (basil, oregano, parsley, thyme, rosemary, crushed pepper)
Press Cancel then close the lid.
Press the soup option for 18 mins or PRESSURE COOK button and set on HIGH for 12 minutes. Turn the valve to SEALING.
After the soup has finished cooking and the instant pot beeps, wait until natural release
Once the pressure is released, open the lid .Add more water as needed if you like a thinner soup.
Serve warm with bread and top with Parmesan cheese and garnish with parsley if desired.
Notes
Cooking time can be decreased if you used canned beans.
If you don't want pasta to be over cooked, you can boil separately and add after lid is opened
