Kaju mushroom masala curry is a very tasty restaurant style recipe in which cashew nuts are cooked with mushrooms in a thick masala gravy.

For Curry

Instructions
For masala
Put all the ingredients for the gravy in a mixi jar and make a smooth, non-stick paste.
For Curry
Heat 2 tbsp oil and add cashew nuts and fry until golden. Keep aside.
Add mushrooms and cook till light golden in color and set aside.
Add another 2 tbsp of oil to another pan , add onion and cook till light golden in color
Add the grounded paste and boil for 3-4 minutes, add 1/2 cup water and let the gravy thicken and the oil rise.
Add red chili, garam masala, turmeric and coriander powder to gravy and mix well.
Add enough salt to taste.
Add fried cashews and mushrooms and cook for 3-4 minutes.
Finally add lemon juice and coriander leaves , mix well.
Serve with roti, chapthi or rice
Notes
Do not over cook mushrooms. It won't tastes good.
We can also use butter or ghee in place of oil.
We can use cream for more silky and rich flavor.
