Here’s a new fusion recipe of pasta made with Indian spices and tomato sauce….Tikka Masala Pasta! Fusion recipes can be a little challenging because you take on the task of getting the perfect complementing tastes across different cuisines.

2 1/2cupsPasta
2 1/2cupsWater
1cuptomato puree
1/2cuponion puree
3tspoil
1/2tspcumin powder
1/2tspgaram masala powder
1 1/2tbsptikka masala powder
1/2cupcream
1/4tspdry fenugreek leaves - kasoori methi
salt to taste
1/2tspGinger garlic paste
Whole spices to ground for tikka masala powder
1/4cupcoriander seeds
1bay leaf
1tspfennel seeds
4Green cardamoms
1/2inchcinnamon
1/2tsppeppercorns
1/2tspblack salt
Salt as per taste
1/2tspamchur powder
1/2tspred chili powder
Instructions
Cooking pasta in instant pot
Press the saute button on the instant pot .
Then add 2 1/2 cups water, salt , 1 tbsp oil and 2 1/2 cups pasta.
Close the lid of the instant pot and turn the steam release handle to the “sealing” position. Press the “Pressure cooking” setting and set the time for 5 minutes.
When the timer expires, use the quick release option to relieve pressure and open the lid.
Strain the pasta and keep them aside.
Making tikka masala powder:
Take a fry pan on medium heat.
Add coriander seeds, green cardamoms, cinnamon, peppercorns and fennel seeds. Fry on medium heat for 5 -6 mins.
Transfer into blender and add red chili powder, black salt, salt and amchur powder.
Blend into fine powder.
Making tikka masala pasta
Press the saute button on the instant pot .
Add oil to the pot, add ginger garlic paste. Saute for 1 minute.
Then add onion puree and saute for 2 mins.
Now add tomato puree and cook for 2 mins.
Then add cumin powder, garam masala powder, tikka masala powder, cream and kasuri methi. Continue to stir for a minute.
Add pasta give it a nice stir.
Cook for 2 -3 mins with glass lid close.
Transfer the contents onto a serving bowl and garnish the pasta with chopped cilantro.
