Easy Black Eyed Pea Salad Recipe
This salad is light and refreshing but also filling and comforting. It’s the perfect appetizer for a summertime gathering.

black eyed pea (or lobia)
1/2
red onion
Finely chopped

Tomato
Finely chopped

tbsp
cilantro or coriander leaves
Finely chopped

ginger chilli paste

Chaat masala
1
tsp
Lemon juice
salt to taste
Instructions
Soak the black-eyed peas in water for 3 hours. Drain and rinse.
Add the black-eyed peas and water to the instant pot.
Secure the lid, close the pressure valve and cook for 5 minutes at high pressure. Cook till tender but not mushy.
Naturally release pressure for 10 minutes, then open the valve to release remaining pressure.
Drain and keep aside.
In a large mixing bowl, add boiled peas, onions, tomatoes, chat masala, lemon juice, ginger chili paste and salt.
Mix everything well
serve immediately.
Notes
It tastes best when eaten fresh.
It is vegan and high protein.
This black eyed pea salad is very delicious with fresh flavors.
You could make black eyed pea salad with avocado too to add a creamy element.
You could also add chopped green pepper to the salad as well or other veggies of your choice like corn, boiled peas etc.
