For Dhokla
1CupMung bean/Green moon dalwashed and soaked overnight
1inchGingerChopped
2Green chilies
1/2CupWater
1/2tspOil
1/2tspCumin seeds
2tspEno salt
Salt as per taste
For Seasoning
2tspOil
1tbspMustard seeds
3Green chilies
Curry leaves
1tbspSugar
1tbspLemon juice
Coriander leavesFor garnish
Grated fresh coconutFor Garnish
Instructions
Making for Dhokla
Soak mung beans for 8 hrs
Drain the mung beans/Moong dal, Rinse in fresh water.
Transfer moong dal into blender
Add ginger, cumin seeds and salt in to blender . Blend till smooth.
Grease a 9 inch cake pan with oil.
Keep water in a pan for steaming
When water in the pan is boiling and ready, mix Eno to the Moong dal mixture
And IMMEDIATELY put in pan to steam for 20 minutes
Take out of steaming pan and let it cool completely.
Prepare Seasoning
Heat Oil. Add 1tbsp Mustard seeds , let them splutter.
Add chopped Green chilies, hing and Curry Leaves.
Stir and add Sugar, lemon juice and Water.
Cut Dhokla and pour seasoning on top.
Garnish with grated Coconut and chopped Cilantro.
Notes
1 cup water may seem like a lot, it will all get absorbed by Dhokla. When you first pour seasoning with water, it seems watery but don't put less, its all taken in by the Dhokla.
