When breakfast is the important meal of the day, then it should be healthy and filling. Having nutrient and proteinrich breakfast makes a delicious way to jump-start your metabolism.

The ancient millets are forgotten and neglected for decades are coming back into many people’s lives as people are realising the health benefits of these ancient grains.

However millets dosa is much lighter, easier to digest and suitable for quick morning breakfast . The beauty of the recipe is that we can mix and match ingredients as we prefer.

Millets have very high nutritional value, unsaturated fats, proteins, minerals, fibre…adding a mix of different types of millets and lentils into your breakfast means…you are having the most nutritional and healthy breakfast.

In this recipe , I decided to mix some of the millets together to get a dosa batter which gives a very tasty healthy dish. Every once in a while I prepare such dosas to add more nutrition to our daily tiffin items. This is also a great way to reduce the consumption of white rice.

Those looking to replace rice from their diet , can consider millets as an healthy alternative . Besides being healthy , i also like the fact that we can speed up a dish preparation , after soaking all the millets , so we can grind all ingredients together to prepare the batter .

In this recipe i have used quinoa, kodo millet, jowar and urad dal. We can also add other millets which are available. Today i have only these 3 millets available at home. So i am planning to making with these.

Ingredients

  • 1 Cup Jowar millet/sorughum
  • 1/2 Cup Kodo millet
  • 1/2 Cup Quinoa
  • 1/2 Cup Urad dal
  • Oil
  • Salt
  • Water

Instructions 

  • Wash and Soak all the millets and urad dal for 6 – 7 hrs
  • After soaking the millets and dal. Then drain water and grind to a smooth and foamy batter.
  • Transfer into bowl and allow the batter overnight for fermentation.
  • Next day, stir the batter well, add salt and adjust the consistency to spreadable thickness.
  • Heat tawa until hot
  • Pour a ladlefull of batter and spread it in circular motion like regular dosa. Drizzle few drops of oil at the sides and centre.
  • Cook until golden in colour. Once done, fold/roll
  • Serve with chutney, sambar

How to make Multi Millet Dosa with Step by Step :

1.Wash and Soak all the millets and urad dal for 6 – 7 hrs

2. After soaking the millets and dal. Then drain water and grind to a smooth and foamy batter.

3. Transfer into bowl and allow the batter overnight for fermentation.

4. Next day, stir the batter well, add salt and adjust the consistency to spreadable thickness.
