Cooking Tips:

  1. You can replace the oats flour with whole wheat flour.
  2. Add sugar according to your taste.
  3. Use ripe bananas that give a natural sweetness and flavor to the bread.

It has bananas,Ragi and Oats.The Sugar I have used is Cocunut sugar- you can use Jaggery or Palm or Raw Sugar- These are less refined versions of the white sugar and hence contain more nutrients.

Ingredients

  • 1.5 Cups Ragi Flour
  • 1 Cups Rolled Oats
  • 3/4 Cup Coconut Sugar 3/4 to 1 cup (Adjust as per sweet you need)
  • 1/2 Cup Oil
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 Cup Yogurt Use dairy Free Yogurt for Vegan version
  • 1 tsp Vanilla Extract
  • 1/4 Cup Walnuts and Sliced Almonds Optional
  • 3 Bananas

Instructions 

  • Preheat the oven to 180 degrees C or 360 degree F.
  • Prepare the loaf Pan by lining it with butter paper and oiling it on all sides or grease with butter .
  • In a large bowl,Mix the Ragi, Oats, Baking Powder, Baking soda & Salt together.
  • Take another bowl and Mash the Bananas.Add the Coconut sugar, Oil and Yogurt and whisk.
  • Pour the liquid banana mix into the Flour mixture.Mix it all well together
  • Pour into a loaf Pan. Add walnuts and sliced almonds on top
  • Bake for 30-40 minutes till the toothpick inserted comes out clean.
  • Cut into Slices and serve

Notes

If you are using jaggery, Make sure the jaggery doesn’t have any lumps
